A comforting and flavorful ramen recipe featuring rich turkey broth, tender noodles, and a perfectly cooked jammy egg. Perfect for cozy nights or impressing guests.

Ingredients

Scale
  • Turkey bones (leftovers from a roast turkey or turkey wings/drumsticks)
  • 8 cups water
  • Fresh ginger, sliced
  • Garlic cloves
  • Scallions (white and green parts)
  • Soy sauce
  • Miso paste
  • Sesame oil
  • Ramen noodles (fresh or dried)
  • Eggs
  • Toppings of choice (nori, sesame seeds, bean sprouts, sliced mushrooms, chili oil)

Instructions

  1. Place turkey bones in a large stockpot with 8 cups of water, sliced ginger, garlic, and the white parts of the scallions. Bring to a boil, then reduce heat to low and let it simmer for 2-3 hours. Skim off any foam that rises to the surface.
  2. Use a fine-mesh strainer to remove bones and solids from the broth. Return the clear broth to the pot.
  3. Stir in soy sauce, miso paste, and a splash of sesame oil. Taste and adjust seasoning as needed.
  4. Bring a medium saucepan of water to a boil. Carefully add eggs and boil for exactly 6 minutes. Transfer eggs to an ice bath and let them cool before peeling.
  5. In the same saucepan, cook the noodles according to package instructions. Drain and set aside.
  6. Divide noodles into bowls. Ladle the hot turkey broth over the noodles, making sure to cover them completely.
  7. Slice the jammy eggs in half and place them on top of the noodles. Garnish with green scallions, sesame seeds, nori, and any other toppings you prefer.
