Ingredients

Scale
  • 1 pound (450g) ground beef, 80/20 blend
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 8 slider buns, lightly toasted
  • 2 tablespoons olive oil or melted butter (for toasting buns)
  • ½ cup (120ml) mayonnaise
  • 2 tablespoons yellow mustard
  • 1 tablespoon dill pickle juice
  • 1 teaspoon honey
  • 1 teaspoon apple cider vinegar
  • ½ teaspoon smoked paprika
  • Pinch of cayenne pepper (optional)
  • Optional toppings: thinly sliced red onion, leafy green lettuce, tomato slices, pickle slices, cheddar cheese slices

Instructions

  1. In a medium bowl, combine ground beef, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix gently until just combined. Divide into 8 equal portions and shape into small, flat patties.
  2. In a small bowl, whisk together mayonnaise, yellow mustard, dill pickle juice, honey, apple cider vinegar, smoked paprika, and cayenne pepper if using. Cover and refrigerate until ready to serve.
  3. Preheat grill to medium-high heat (about 375°F). Clean grates to prevent sticking.
  4. Brush slider buns with olive oil or melted butter. Toast cut-side down on the grill for 1–2 minutes until lightly browned. Remove and keep warm.
  5. Grill patties for 2–3 minutes per side for medium doneness (internal temperature 160°F). If using cheese, add a slice during the last minute and close grill lid to melt.
  6. Spread tangy special sauce on bottom half of each bun. Add grilled patty and desired toppings. Top with the other half of the bun.
  7. Serve immediately while hot.

Notes

Do not overwork the meat to keep sliders juicy. Use a meat thermometer to ensure internal temperature reaches 160°F. Toast buns last minute to prevent sogginess. Let patties rest a few minutes after grilling to redistribute juices. Keep a spray bottle of water handy to control flare-ups on the grill.
