  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can Rotel (diced tomatoes with green chilies)
  • 2 cups chicken broth
  • 2 cups uncooked pasta (elbow macaroni or shells)
  • 2 cups cheddar cheese, freshly shredded
  • 1/2 cup sour cream
  • Optional toppings: chopped cilantro, sliced jalapeños, guacamole

Instructions

  1. Heat a skillet over medium heat and cook the ground beef until browned, breaking it into crumbles as it cooks. Add the chopped onion and minced garlic, sautéing until softened (about 2-3 minutes). Drain any excess grease.
  2. Transfer the cooked beef mixture to your crockpot. Stir in the taco seasoning, Rotel, and chicken broth until well combined.
  3. Add the uncooked pasta to the crockpot and stir gently to ensure it’s evenly coated with the liquid.
  4. Set your crockpot to low heat and cook for 2-3 hours, stirring occasionally. Check after 2 hours to ensure the pasta is tender but not overcooked.
  5. Once the pasta is cooked to your liking, stir in the shredded cheddar cheese and sour cream until the sauce is creamy and smooth.
