A hearty and flavorful chicken tortilla soup packed with zesty tomatoes, tender chicken, and warm spices. Perfect comfort food for chilly evenings or casual gatherings.

  • 2 boneless, skinless chicken breasts or thighs
  • 4 cups low-sodium chicken broth
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 medium yellow or white onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 2 tablespoons olive oil
  • Juice of 1 lime
  • Tortilla strips (homemade or store-bought)
  • Optional toppings: sour cream, shredded cheese, chopped cilantro, diced avocado, sliced jalapeños

Instructions

  1. Heat 2 tablespoons of olive oil in a large soup pot over medium heat. Add the diced onion and sauté for about 3-4 minutes, or until softened.
  2. Add the minced garlic and cook for another 30 seconds, stirring constantly to avoid burning.
  3. Stir in the chili powder, cumin, smoked paprika, and oregano, cooking for 1 minute to release their aroma.
  4. Add the chicken breasts, chicken broth, canned diced tomatoes, black beans, and corn kernels to the pot. Stir to combine.
  5. Bring the soup to a boil, then reduce the heat to a simmer. Cover and cook for 20 minutes, or until the chicken is cooked through.
  6. Remove the chicken breasts from the pot and shred them using two forks. Return the shredded chicken to the pot and stir.
  7. Add the lime juice and taste the soup. Adjust the seasoning with salt and pepper as needed.
  8. If you prefer a smoother texture, use an immersion blender to blend a portion of the soup. Otherwise, leave it chunky.
  9. Meanwhile, prepare the tortilla strips. Heat a small amount of oil in a skillet over medium heat. Cut tortillas into strips and fry them until crispy, about 1-2 minutes per side. Drain on paper towels.
  10. Serve the soup warm, topped with tortilla strips, sour cream, shredded cheese, chopped cilantro, diced avocado, and sliced jalapeños. Enjoy!
