  • Zest of 2 lemons
  • 1 cup (200 g) granulated sugar
  • 1/2 cup (113 g) unsalted butter, cut into small cubes
  • 3 large eggs, whisked until smooth
  • Pinch of salt

Instructions

  1. Whisk 3 large eggs in a microwave-safe bowl until completely smooth.
  2. Add 1 cup (200 g) sugar, 1/2 cup (120 ml) freshly squeezed lemon juice, lemon zest, and a pinch of salt to the eggs. Whisk until fully combined.
  3. Stir in 1/2 cup (113 g) unsalted butter cubes.
  4. Microwave the mixture on high for 1 minute. Remove and whisk thoroughly. Repeat this process in 30-second intervals, whisking after each one, for about 3-4 minutes or until the curd thickens.
  5. Check for doneness: The curd is ready when it coats the back of a spoon and leaves a trail when you run your finger through it.
  6. Strain the curd through a fine mesh sieve for a perfectly smooth texture (optional).
  7. Transfer the curd to a clean jar and let it cool to room temperature. Store in the refrigerator for up to two weeks.
