This quick and easy recipe features tender salmon fillets glazed with a sweet and tangy maple Dijon sauce, served alongside crisp roasted fresh green beans. Perfect for busy weeknights or casual dinner parties.

Ingredients

Scale
  • ¼ cup pure maple syrup
  • 2 tablespoons Dijon mustard
  • 1 garlic clove, minced
  • 1 tablespoon fresh lemon juice
  • Salt and freshly ground black pepper, to taste
  • Olive oil (extra virgin), for searing and roasting
  • Salmon fillets, skin-on, about 6 ounces (170 grams) each
  • Optional: Fresh dill or parsley for garnish
  • 12 ounces fresh green beans, trimmed
  • Olive oil, for roasting
  • Salt and pepper, to taste
  • Optional: A pinch of red chili flakes

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil or parchment paper for easier cleanup.
  2. In a mixing bowl, whisk together ¼ cup (60 ml) pure maple syrup, 2 tablespoons (30 g) Dijon mustard, 1 minced garlic clove, and 1 tablespoon (15 ml) fresh lemon juice. Season with salt and pepper to taste until smooth and glossy.
  3. Wash and snap off the ends of about 12 ounces (340 g) of fresh green beans. Pat them dry thoroughly.
  4. Toss green beans with 1 tablespoon (15 ml) olive oil, salt, pepper, and a pinch of red chili flakes if using. Spread them out on one side of the baking sheet in a single layer.
  5. Pat each 6-ounce (170 g) salmon fillet dry with paper towels. Lightly brush or spoon olive oil over the skin side to prevent sticking, then place them skin-side down on the other side of the baking sheet.
  6. Brush the glaze generously over the top of each salmon fillet. Reserve a little glaze for basting halfway through cooking.
  7. Roast in the preheated oven for 12 minutes. At the 6-minute mark, baste the salmon with the remaining glaze and gently toss the green beans to ensure even cooking.
  8. Check for doneness: salmon should flake easily with a fork but remain moist inside; green beans should be tender-crisp with slight browning.
  9. Remove from oven and let the salmon rest for 2-3 minutes. Garnish with fresh dill or parsley if desired.
  10. Serve immediately alongside the roasted green beans.

Notes

Pat salmon dry before glazing to help the glaze stick and caramelize. Do not overcrowd the baking sheet to avoid steaming the green beans. Baste salmon halfway through cooking for a shiny, sticky finish. If fillets are thicker, add 2-3 minutes to roasting time. Glaze can be made ahead and stored in the fridge for up to 2 days.
