Instructions

  1. Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, beat 1 cup softened unsalted butter with 3/4 cup granulated sugar and 3/4 cup packed brown sugar until fluffy and light in color, about 3-4 minutes.
  3. Beat in 2 large eggs, one at a time, then mix in 2 teaspoons vanilla extract.
  4. In a separate bowl, whisk together 2 1/4 cups all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon salt. Gradually add this dry mix to the wet ingredients, stirring gently until just combined.
  5. Fold in 2 cups semi-sweet chocolate chips evenly through the dough.
  6. Using a tablespoon or cookie scoop, drop dough onto the prepared baking sheets, spacing about 2 inches apart. Flatten each mound slightly with the back of a spoon or fingers.
  7. Bake for 9-11 minutes until cookies are golden around edges but still soft in the center.
  8. Transfer cookies to a wire rack and let cool completely.
  9. Once cooled, scoop about 2 tablespoons (30g) of slightly softened ice cream onto the flat side of one cookie. Gently press another cookie on top to form a sandwich. Wipe any excess ice cream from edges.
  10. Wrap each sandwich individually in plastic wrap or wax paper and freeze for at least 1 hour before serving.
