  • 1 cup shredded mozzarella cheese
  • ½ cup finely grated Parmesan cheese

  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Unfold the thawed puff pastry sheet onto a lightly floured surface. Roll out gently to an even rectangle about 12×9 inches.
  3. Spread about ½ cup of basil pesto evenly over the pastry, leaving a ½ inch margin around the edges.
  4. Sprinkle 1 cup shredded mozzarella and ½ cup grated Parmesan evenly over the pesto. Add garlic powder, salt, and black pepper if desired.
  5. Roll the pastry tightly from the long edge into a log and pinch the seam to seal.
  6. Slice the log into ¾-inch thick rounds, aiming for 12-15 pinwheels. Chill the log for 10 minutes if dough feels sticky.
  7. Place pinwheels cut side up on the prepared baking sheet, spacing about 1 inch apart. Brush each with beaten egg.
  8. Bake for 12-15 minutes until pastry is puffed and golden and cheese is bubbly. Watch closely after 10 minutes to avoid burning.
  9. Let pinwheels rest for 5 minutes on the tray before transferring to a wire rack. Serve warm or at room temperature.
