  • 1/2 cup (100 g) granulated sugar

  • 3 cups (450 g) fresh strawberries, hulled and sliced
  • 2 tbsp granulated sugar (optional)
  • 1 tbsp fresh lemon juice
  • 24 ladyfingers (Savoiardi recommended)
  • 1/2 cup (120 ml) strawberry juice or syrup
  • Fresh mint leaves (optional garnish)
  • Powdered sugar for dusting (optional garnish)
  • Extra sliced strawberries (optional garnish)

Instructions

  1. In a medium bowl, combine sliced strawberries with sugar and lemon juice. Let macerate for at least 15 minutes to release juices.
  2. Whip the cold heavy cream in a chilled bowl on medium-high speed until soft peaks form, about 3-5 minutes.
  3. In another bowl, gently beat mascarpone cheese with sugar and vanilla extract until smooth and creamy.
  4. Carefully fold whipped cream into mascarpone mixture using a spatula to keep it light and airy.
  5. Quickly dip each ladyfinger into strawberry juice or syrup; do not soak. Arrange a layer of dipped ladyfingers in the bottom of the dish or glasses.
  6. Spread half of the mascarpone cream evenly over the ladyfingers, then spoon half of the macerated strawberries and juices over the cream.
  7. Repeat layers with remaining dipped ladyfingers, mascarpone cream, and strawberries. Smooth the top gently.
  8. Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  9. Before serving, garnish with fresh mint leaves, powdered sugar, and extra strawberry slices if desired. Serve chilled.

Notes

Keep cream and mixing bowl cold for better whipping. Do not over-soak ladyfingers to avoid mushiness. Fold cream gently into mascarpone to maintain light texture. Chill at least 4 hours or overnight for best flavor and texture. Use ripe strawberries for natural sweetness. For gluten-free, substitute ladyfingers with almond flour biscuits. For dairy-free, try coconut cream and vegan cream cheese alternatives, though mascarpone is hard to replace exactly.
