Instructions

  1. Preheat the grill to medium-high heat, around 375°F (190°C).
  2. Peel, core, and slice the pineapple into ½-inch thick rings or wedges. Place the slices in a mixing bowl.
  3. In a small bowl, combine 2 tablespoons granulated sugar with 1 teaspoon ground cinnamon.
  4. Drizzle melted butter over the pineapple slices, then sprinkle the cinnamon sugar evenly. Toss gently to coat all sides without breaking the fruit.
  5. Place the pineapple slices carefully on the grill. Cook for about 3-4 minutes per side, turning once, until grill marks appear and the sugar is caramelized.
  6. Transfer the grilled pineapple to serving plates.
  7. Spoon a generous scoop of vanilla ice cream over each serving of warm pineapple.
  8. Optionally, squeeze a lime wedge over the top and sprinkle with toasted coconut or fresh mint. Serve immediately.
