Instructions

  1. Combine sliced strawberries, sugar, and lemon juice in a small bowl. Toss gently and let sit at room temperature to macerate.
  2. In a medium bowl, beat softened cream cheese, sugar, vanilla extract, and lemon zest with a hand mixer until smooth and creamy. Chill in the fridge.
  3. In a large shallow dish, whisk together eggs, milk, sugar, vanilla extract, cinnamon, and salt until well combined.
  4. Lay out 4 slices of bread. Spread about 2 tablespoons of cheesecake filling on each slice, then spoon a generous amount of the macerated strawberries over the filling. Top with remaining bread slices, pressing gently to seal.
  5. Heat a large skillet over medium heat and melt 1 tablespoon of butter. Place the stuffed French toast sandwiches seam side down. Cook for 4-5 minutes per side, adding more butter as needed, until golden brown and crispy and the filling is warm.
