  • 1/2 cup (100g) packed light brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract

  • 2 1/2 cups (315g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup crushed peppermint bark candy (about 6 ounces)
  • 1/2 cup white chocolate chips
  • Optional: Additional crushed peppermint candies for sprinkling on top

Instructions

  1. In a large bowl, cream together 1 cup softened unsalted butter, 3/4 cup granulated sugar, and 1/2 cup packed light brown sugar until light and fluffy (about 3-4 minutes with an electric mixer).
  2. Beat in 2 large eggs one at a time, then stir in 1 teaspoon vanilla extract and 1/2 teaspoon almond extract.
  3. In a separate bowl, whisk together 2 1/2 cups all-purpose flour, 1/2 teaspoon baking soda, and 1/2 teaspoon salt. Gradually add this to the wet mixture, mixing on low speed until just combined.
  4. Gently fold in 1 cup crushed peppermint bark candy and 1/2 cup white chocolate chips.
  5. Cover and chill the dough for at least 30 minutes (or 15 minutes in the freezer if short on time).
  6. Preheat oven to 350Β°F (175Β°C). Line baking sheets with parchment paper or silicone mats.
  7. Scoop dough using a tablespoon-sized cookie scoop and place about 2 inches apart on the baking sheets. Optionally, sprinkle crushed peppermint candies on top.
  8. Bake for 10-12 minutes, or until edges are golden and centers are set but still slightly soft.
  9. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes
