Crispy Mexican Pizza Recipe for the Best Homemade Taco Night

A homemade twist on Taco Bell’s iconic Mexican pizza, featuring crispy tortillas, seasoned beef, gooey cheese, and vibrant toppings. Perfect for taco nights, game days, or casual dinners.

Ingredients

  • Medium-sized flour tortillas
  • Lean ground beef
  • Taco seasoning (store-bought or homemade)
  • Refried beans
  • Shredded cheddar and Monterey Jack cheese
  • Tomato sauce or salsa
  • Olive oil
  • Diced tomatoes
  • Sliced black olives
  • Diced onions
  • Chopped cilantro
  • JalapeƱo slices (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
  2. Brush both sides of your tortillas lightly with olive oil. Place them on the prepared baking sheet and bake for 5-7 minutes on each side, or until they’re golden and crispy. Set aside.
  3. Heat a skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula. Drain any excess grease.
  4. Stir in taco seasoning and 1/4 cup water to the cooked beef. Simmer for 3-5 minutes until the mixture thickens. Taste and adjust seasoning, if needed.
  5. Warm the refried beans in a saucepan or microwave to make them easier to spread.
  6. On one crispy tortilla, spread a generous layer of refried beans. Add a layer of the seasoned beef on top.
  7. Place another crispy tortilla on top to create a ‘pizza sandwich.’ Spread a thin layer of tomato sauce or salsa over the top tortilla.
  8. Sprinkle a generous amount of shredded cheese over the sauce. Add your favorite toppings like diced tomatoes, black olives, onions, and jalapeƱo slices.
  9. Place the assembled Mexican pizzas back into the oven and bake for 5-7 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven and let cool slightly before slicing into wedges or quarters. Serve warm and enjoy!
