  • 32 oz (900 g) frozen shredded hash browns
  • 2 cups (200 g) sharp cheddar cheese, shredded
  • 1 cup (240 ml) full-fat sour cream
  • ½ cup (115 g) butter, melted
  • 1 can (10.5 oz / 298 g) cream of chicken soup (or cream of mushroom for vegetarian)
  • 1 small onion, finely chopped
  • 1 tsp (5 g) garlic powder
  • Salt and pepper to taste
  • 1 ½ cups (150 g) French fried onions
  • Optional: ½ cup (75 g) diced cooked bacon

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your 9×13 inch baking dish with butter or non-stick spray.
  2. Thaw the hash browns slightly if frozen solid; leave out for about 10 minutes until cold but not icy.
  3. In a large mixing bowl, combine shredded hash browns, sour cream, cream of chicken soup, chopped onion, garlic powder, salt, and pepper. Mix gently but thoroughly.
  4. Fold in 1 ½ cups of shredded cheddar cheese and optional cooked bacon pieces, mixing lightly.
  5. Pour the mixture into the prepared baking dish and spread evenly with a spatula.
  6. In a small bowl, melt the butter and toss it with French fried onions until well coated.
  7. Sprinkle the buttery onion mixture evenly over the top of the potatoes.
  8. Bake uncovered for 40-45 minutes, or until edges are golden brown, cheese is melted, and topping is crispy.
  9. Let rest for 5-10 minutes before serving to set and make slicing easier.

Notes

Avoid over-mixing to prevent mushy texture. Use full-fat sour cream for best creaminess. For gluten-free, substitute French fried onions with gluten-free crackers or breadcrumbs. For dairy-free, use coconut yogurt and vegan cheese. To get extra crispy topping, broil for last 1-2 minutes watching closely.
