  • 1 1/2 cups shredded sharp cheddar cheese (about 6 ounces)
  • 1 cup shredded mozzarella cheese (about 4 ounces)
  • 6 slices bacon, cooked and crumbled
  • 2 green onions, thinly sliced
  • 1/4 cup sour cream (optional)
  • Fresh parsley, chopped (optional)

Instructions

  1. Preheat your oven to 425Β°F (220Β°C).
  2. Slice the potatoes thinly and evenly, about 1/8-inch thick.
  3. Place the potato slices in a large bowl and toss with olive oil, salt, pepper, and smoked paprika if using.
  4. Arrange the potatoes in a single layer on a parchment-lined baking sheet, ensuring they do not overlap. Use a wire rack inside the baking sheet if available for extra crispiness.
  5. Bake for 20-25 minutes, flipping the potato slices halfway through baking for even browning.
  6. While the potatoes bake, cook the bacon until crispy and crumble into bite-sized pieces.
  7. Remove the potatoes from the oven and immediately sprinkle shredded cheddar and mozzarella evenly over the top, followed by the crumbled bacon.
  8. Return the tray to the oven for another 5-7 minutes until the cheese melts and bubbles.
  9. Take out the nachos and garnish with sliced green onions, dollops of sour cream, and chopped fresh parsley if desired.
  10. Serve hot for the best melty, crispy experience.
