Instructions

  1. Cook the bacon in a medium skillet over medium heat until crispy, about 6-8 minutes. Transfer to paper towels to drain and chop into bite-sized pieces. Save some bacon fat for toasting buns if desired.
  2. Make the Mornay sauce: In a medium saucepan, melt 2 tablespoons unsalted butter over medium heat. Whisk in 2 tablespoons all-purpose flour and stir continuously for about 2 minutes until golden and bubbly but not browned.
  3. Slowly pour in 1 ½ cups warmed whole milk while whisking to prevent lumps. Continue whisking until the sauce thickens and coats the back of a spoon, about 5-7 minutes.
  4. Remove from heat and stir in ¾ cup grated Gruyère cheese and ¼ cup Parmesan cheese. Add a pinch of nutmeg, salt, and freshly ground black pepper to taste. Keep warm.
  5. Slice slider buns in half horizontally and spread softened butter on cut sides. Toast buns butter-side down in the skillet used for bacon over medium heat until golden and crispy, about 2-3 minutes.
  6. Assemble sliders by layering sliced turkey (about 1 ounce per bun), a slice of tomato, and a drizzle of warm Mornay sauce on the toasted bottom buns. Sprinkle chopped bacon evenly over each slider.
