Crispy honey balsamic chicken thighs with a sticky, sweet and tangy glaze that delivers juicy, flavorful comfort food in under 40 minutes.

  • 6 bone-in, skin-on chicken thighs (about 1.5 pounds / 700 grams)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1/4 cup honey (85 grams)
  • 1/4 cup balsamic vinegar (60 ml)
  • 1 tablespoon Dijon mustard
  • About 4 fresh thyme sprigs (optional)
  • A pinch of red pepper flakes (optional)
  • 2 tablespoons water

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken thighs dry with paper towels and season both sides generously with salt and pepper.
  3. Heat 2 tablespoons olive oil in a large oven-safe skillet over medium-high heat until shimmering hot.
  4. Place chicken thighs skin-side down in the skillet and cook undisturbed for 6-8 minutes until the skin is deeply golden and releases easily from the pan.
  5. Flip the thighs and cook the other side for 3-4 minutes, then remove chicken briefly onto a plate.
  6. Lower heat to medium and add minced garlic to the skillet; sauté for about 30 seconds until fragrant.
  7. Mix honey, balsamic vinegar, Dijon mustard, water, and red pepper flakes (if using) in a small bowl.
  8. Pour the glaze into the skillet with garlic, stirring gently to combine.
  9. Return chicken thighs skin-side up into the skillet nestled into the glaze and add fresh thyme sprigs.
  10. Transfer skillet to the oven and roast for 15-20 minutes, or until an instant-read thermometer inserted into the thickest part reads 165°F (74°C).
  11. Halfway through roasting, baste the chicken with glaze from the pan.
  12. Remove from oven and let rest for 5 minutes to allow juices to redistribute and glaze to thicken.
  13. Serve hot, spooning extra glaze over the top.

Notes

Pat chicken skin dry for extra crispiness. Do not overcrowd the pan. Use medium-high heat to render fat and crisp skin. Lower heat before adding glaze to prevent burning honey. Baste halfway through roasting. Leftover glaze can be warmed and drizzled over veggies or rice. Broil 1-2 minutes at the end for extra crispiness if desired.
