Instructions

  1. Peel and dice russet potatoes into uniform ½-inch cubes. Rinse thoroughly in cold water to remove excess starch, then drain and pat dry with paper towels.
  2. Heat 1 tablespoon olive oil and butter over medium-low heat in a skillet. Add thinly sliced onions and cook, stirring occasionally, for about 20 minutes until deep golden brown and caramelized. Add minced garlic in the last 2 minutes.
  3. In a separate large skillet, heat 2 tablespoons olive oil over medium-high heat. Add dried potatoes in a single layer, seasoning with salt, pepper, and smoked paprika. Cook undisturbed for about 5 minutes until bottoms start to crisp and brown.
  4. Stir potatoes gently and add vegetable broth or water. Cover with a lid and steam for 5-7 minutes on medium heat to soften potatoes.
  5. Remove lid and continue frying potatoes, stirring occasionally, until golden and crispy all over, about 8-10 more minutes.
  6. Combine caramelized onions with the home fries in the skillet. Stir gently to coat evenly.
  7. Remove from heat and sprinkle chopped fresh parsley on top.
  8. Serve immediately while hot and crispy.
