A quick and easy appetizer featuring asparagus spears wrapped in thin prosciutto slices, grilled to crispy perfection with a touch of olive oil and cracked black pepper.

  • 1 pound (450 grams) asparagus spears, trimmed
  • 8 to 10 thin slices (about 3 ounces / 85 grams) prosciutto
  • 2 tablespoons extra virgin olive oil
  • Juice of half a lemon (optional)
  • Freshly cracked black pepper, to taste
  • Pinch of sea salt
  • 1/4 teaspoon garlic powder (optional)

Instructions

  1. Rinse 1 pound (450 g) of asparagus spears under cold water. Snap or cut off the woody ends—usually about 1 to 2 inches (2.5 to 5 cm). Pat dry with a clean towel to avoid excess moisture on the grill (about 5 minutes).
  2. Lay out 8 to 10 thin slices of prosciutto on a clean surface. If the slices are too long, cut them in half crosswise (about 2 minutes).
  3. Take 3 to 4 asparagus spears and wrap one slice of prosciutto tightly around them, starting at the bottom and spiraling up to the tips. The prosciutto should hold the spears snugly but not squeeze them (about 5 minutes).
  4. Place bundles on a plate and brush lightly with 2 tablespoons of extra virgin olive oil. Sprinkle with a pinch of sea salt, 1/4 teaspoon garlic powder (optional), and freshly cracked black pepper (3 minutes).
  5. Heat your grill to medium-high, around 400°F (200°C). Make sure the grates are clean and oiled to prevent sticking (10 minutes).
  6. Place bundles on the grill perpendicular to the grates to avoid falling through. Grill for about 3 to 4 minutes per side, turning carefully with tongs until the prosciutto is crispy and the asparagus is tender but still has a slight bite.
  7. Remove from heat and squeeze fresh lemon juice over the bundles for a zesty pop (optional, 1 minute).
  8. Arrange on a serving platter and serve warm.

Notes

Pat asparagus dry before grilling to avoid sogginess. Use thick asparagus spears for best texture. Use thin prosciutto slices for crispiness. Turn bundles gently with tongs to prevent tearing. If prosciutto burns, lower heat or move bundles to cooler grill area. Bundles can be prepped ahead and grilled just before serving. Oven baking at 425°F (220°C) for 10-12 minutes is a good alternative if no grill is available.
