  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon smoked paprika (optional)

Instructions

  1. Preheat your oven to 425Β°F (220Β°C). Line a rimmed baking sheet with parchment paper.
  2. Wash and dry the potatoes thoroughly. Cut them into halves or quarters, about 1 to 1.5 inches in size.
  3. In a mixing bowl, combine olive oil, minced garlic, kosher salt, black pepper, and smoked paprika if using. Stir well.
  4. Add the cut potatoes to the bowl and toss to coat each piece evenly with the oil and seasoning mixture.
  5. Spread the potatoes out in a single layer on the prepared baking sheet with cut sides down. Avoid overcrowding.
  6. Roast for 25 minutes, flipping the potatoes halfway through for even browning.
  7. Remove the baking sheet from the oven and sprinkle the grated Parmesan and chopped herbs over the potatoes. Toss gently to coat and spread them back out in a single layer.
  8. Return to the oven and roast for another 10-15 minutes until the Parmesan crisps and the potatoes are tender inside.
  9. Remove from oven and let cool for 5 minutes. Adjust seasoning if needed and serve warm.
