  • 1 cup (225 g) cottage cheese, well-drained and blended smooth (small-curd preferred)
  • 1 large egg, room temperature
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 tablespoons olive oil
  • 2 teaspoons everything seasoning blend (poppy seeds, sesame seeds, dried onion, garlic, and salt)
  • Optional: pinch of coarse sea salt
  • Optional: olive oil for brushing before baking

Instructions

  1. Drain 1 cup (225 g) of cottage cheese well by placing it in a fine mesh sieve or cheesecloth for 10 minutes. Transfer to a food processor or blender and pulse until smooth. (Approx. 5 minutes)
  2. In a large mixing bowl, combine 1 ½ cups (180 g) all-purpose flour, 1 teaspoon baking powder, and ½ teaspoon salt. Stir to mix evenly. (Approx. 2 minutes)
  3. Add the blended cottage cheese, 1 large egg, and 2 tablespoons olive oil to the dry ingredients. Stir until a soft dough forms. If too sticky, add flour a tablespoon at a time. (Approx. 5 minutes)
  4. Lightly flour a clean surface. Pat or roll the dough into a flat circle about 10 inches (25 cm) in diameter and ¼ inch (6 mm) thick. (Approx. 5 minutes)
  5. Place dough on a parchment-lined baking sheet or pizza stone. Brush lightly with olive oil. Sprinkle 2 teaspoons everything seasoning evenly on top, add a pinch of coarse sea salt if desired. (Approx. 3 minutes)
  6. Preheat oven to 425°F (220°C). Bake flatbread for 12-15 minutes until edges are golden and crispy. Watch closely near the end. (Approx. 15 minutes)
  7. Remove from oven and cool on a rack for 5 minutes before slicing. (Approx. 5 minutes)

Notes

Drain and blend cottage cheese well to avoid soggy dough. Brush olive oil before baking for extra crispiness. Keep an eye on baking time to prevent burning. Let flatbread cool before slicing to maintain crispness.
