  • 1/2 cup (100g) granulated sugar (for cinnamon sugar coating)
  • 2 teaspoons ground cinnamon
  • 4 oz (115g) bittersweet or semisweet chocolate chips
  • 1/2 cup (120ml) heavy cream
  • 1 tablespoon (14g) unsalted butter
  • 1 teaspoon vanilla extract
  • Pinch of salt (for chocolate sauce)

Instructions

  1. In a medium saucepan, combine 1 cup water, 2 tablespoons unsalted butter, 2 tablespoons sugar, and 1/2 teaspoon salt. Bring to a rolling boil over medium heat, stirring occasionally (about 5 minutes).
  2. Remove pan from heat and immediately add 1 cup flour all at once. Stir vigorously with a wooden spoon until mixture forms a smooth ball and pulls away from the sides (2-3 minutes). Let cool for 5 minutes.
  3. Crack in 1 large egg and beat thoroughly into the dough until fully combined and smooth. Adjust consistency with a teaspoon of water or flour if needed.
  4. Heat vegetable oil in a deep frying pan or Dutch oven to 350°F (175°C) to a depth of about 2 inches.
  5. Transfer dough into a piping bag fitted with a large star tip. Pipe 1- to 2-inch lengths directly into hot oil, cutting with scissors or knife to release. Fry in batches (8-10 bites per batch).
  6. Fry churro bites for 2-3 minutes per side until puffed and deep golden brown, turning gently with a slotted spoon. Adjust heat if oil darkens quickly.
  7. Remove bites with slotted spoon and drain on wire rack lined with paper towels. While warm, toss in cinnamon sugar mixture until fully coated.
  8. To make chocolate sauce, warm 1/2 cup heavy cream in a small saucepan until just simmering. Remove from heat and add 4 oz chocolate chips, 1 tablespoon butter, 1 teaspoon vanilla extract, and a pinch of salt. Stir until smooth and glossy. Keep warm.
  9. Serve churro bites warm with chocolate dipping sauce.

Maintain oil temperature at 350°F (175°C) for crispy bites without greasiness. Fry in small batches to avoid overcrowding. Use a large star tip for classic ridged texture.
