These festive Rice Krispie treats combine the classic sweet, crunchy texture with a hint of vanilla and are shaped into Christmas trees, perfect for holiday parties and gifting.

  • 6 cups Rice Krispies Cereal (about 180g)
  • 10 ounces marshmallows (about 280g), regular size
  • 3 tablespoons unsalted butter (about 43g), softened
  • 1 teaspoon vanilla extract
  • A few drops green food coloring (optional)
  • Sprinkles and edible decorations (assorted colors and shapes)

Instructions

  1. Grease a 9×13-inch baking dish with butter or non-stick spray and set aside.
  2. In a large saucepan over low heat, melt 3 tablespoons of unsalted butter, being careful not to brown it.
  3. Add 10 ounces of marshmallows to the melted butter and stir continuously with a wooden spoon or silicone spatula until completely melted and smooth, about 3-5 minutes.
  4. Remove from heat and stir in 1 teaspoon vanilla extract and a few drops of green food coloring if using, mixing until evenly distributed.
  5. Quickly pour 6 cups of Rice Krispies cereal into the marshmallow mixture and gently fold until every piece is coated, being careful not to crush the cereal.
  6. Transfer the mixture into the prepared baking dish and press down evenly and firmly to about 1-inch thickness using a buttered spatula or wax paper.
  7. While still slightly warm, use a Christmas tree-shaped cookie cutter to cut out tree shapes. If you don’t have a cutter, cut freehand with a butter knife.
  8. Decorate the trees with sprinkles, edible glitter, or mini candy ornaments while still slightly sticky.
  9. Let the trees cool completely at room temperature for about 30 minutes before removing from the pan and serving.

Notes

Melt butter and marshmallows over low heat to avoid scorching. Use fresh marshmallows for best results. Grease your spatula, hands, and baking dish liberally to prevent sticking. Fold cereal gently to keep crispness. Shape treats while warm but not hot. Prep decorations ahead to add immediately after cutting. If mixture cools too much before shaping, warm briefly on low heat.
