  • 1 lb lean ground chicken
  • 1 head butter lettuce or iceberg lettuce
  • 1/2 cup chopped water chestnuts
  • 34 green onions, sliced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 3 tbsp soy sauce
  • 2 tbsp hoisin sauce
  • 1 tsp sesame oil
  • 1 tsp rice vinegar
  • 1 tbsp brown sugar
  • 1/4 tsp red pepper flakes (optional)
  • 2 tbsp vegetable oil
  • Fresh cilantro (optional, for garnish)

Instructions

  1. Carefully separate the lettuce leaves, rinse under cold water, and pat dry. Set aside.
  2. In a small bowl, whisk together soy sauce, hoisin sauce, sesame oil, rice vinegar, and brown sugar until smooth. Set aside.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat. Add minced garlic and grated ginger, stirring constantly for about 30 seconds until fragrant.
  4. Add ground chicken to the pan. Break apart with a spatula and cook for 5-7 minutes, stirring occasionally, until no longer pink and crispy bits form. Drain excess liquid if needed.
  5. Stir in chopped water chestnuts and sliced green onions. Cook for 2 minutes to warm through.
  6. Pour the sauce mixture over the chicken. Stir well to coat evenly and cook for 2-3 minutes until the sauce thickens and becomes sticky.
  7. Taste and add red pepper flakes if desired. Adjust soy sauce or sugar if needed. Remove from heat.
  8. Spoon the chicken mixture into the center of each lettuce leaf. Garnish with fresh cilantro if desired. Serve immediately.

Notes

Do not overload lettuce cups to prevent them from falling apart. Cook chicken until just crispy but still juicy. Drain excess liquid for better texture. Use tamari or gluten-free soy sauce for gluten-free version. Assemble wraps just before serving to keep lettuce crisp.
