  • 3 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon ground cumin
  • ½ teaspoon chili powder (optional)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. Trim the cauliflower: Remove the outer leaves and cut the stem flush with the base. Slice the cauliflower into ¾-inch thick steaks. You should get 3-4 steaks depending on the size of the cauliflower.
  3. In a small bowl, mix together smoked paprika, garlic powder, onion powder, cumin, chili powder, salt, and black pepper.
  4. Brush both sides of the cauliflower steaks generously with olive oil. This helps them crisp up beautifully in the oven.
  5. Sprinkle the spice mix evenly over both sides of the steaks, pressing gently to help it stick.
  6. Arrange the steaks on the prepared baking sheet, leaving space between each piece for even roasting.
  7. Bake for 25-30 minutes, flipping halfway through. They’re done when the edges are golden brown and crispy, and the centers are tender.
  8. Garnish with fresh parsley before serving, if desired. Serve hot and enjoy!
