  • Bacon strips (thin-cut or regular)
  • 2 tablespoons brown sugar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon freshly ground black pepper
  • Toothpicks
  • Pinch of cayenne pepper (optional)
  • Lemon wedges (for serving)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with aluminum foil and place a wire rack on top if available.
  2. Pat shrimp dry with paper towels to remove excess moisture. In a mixing bowl, toss shrimp with brown sugar, smoked paprika, garlic powder, black pepper, and a pinch of cayenne if using until well coated.
  3. Cut bacon strips in half if large. Wrap one piece of bacon around each shrimp and secure with a toothpick.
  4. Arrange bacon-wrapped shrimp on the wire rack spaced apart to allow heat circulation. If no rack, place directly on foil-lined baking sheet and plan to flip halfway through baking.
  5. Bake for 15-18 minutes, flipping halfway through if on foil, until bacon is golden and crispy and shrimp is opaque and firm. Check at 14 minutes to avoid burning.
  6. Optional: Broil for 1-2 minutes at the end for extra crispiness, watching carefully to prevent burning.
  7. Let cool for a few minutes, then serve warm with lemon wedges.

Notes

Pat shrimp dry thoroughly to ensure bacon crisps well. Use thin-cut bacon for best crispiness. If no wire rack, flip shrimp halfway through baking. Watch closely during broil to avoid burning. Leftovers keep well refrigerated for up to 2 days and reheat best in oven or skillet to maintain crispiness.
