Crispy Bacon Wrapped Dates with Goat Cheese

These easy party appetizers combine sweet Medjool dates, creamy goat cheese, and crispy bacon for an irresistible bite-sized treat. Perfect for gatherings, game nights, or a cozy snack, they’re naturally gluten-free and come together in under 30 minutes.

  • 20 Medjool dates, pitted (about 7 oz / 200g)
  • 4 oz (115g) soft, spreadable goat cheese
  • 10 slices thin-cut bacon (about 8.5 oz / 240g)
  • Toothpicks
  • Optional: Chopped fresh parsley, crushed pistachios or walnuts, drizzle of honey or balsamic glaze

Instructions

  1. Preheat the oven to 400Β°F (200Β°C).
  2. Line a baking sheet with parchment paper or aluminum foil. If you have a wire rack, place it inside the sheet.
  3. If dates are not pitted, slice along one side and remove the pit, keeping the date mostly intact.
  4. Stuff each date with about 1 teaspoon of goat cheese. Mix in herbs or nuts with the cheese if desired.
  5. Cut each bacon slice in half crosswise. Wrap one piece of bacon around each stuffed date, seam-side down.
  6. Secure each date with a toothpick (soak wooden toothpicks in water for 10 minutes first).
  7. Arrange dates on the baking sheet, spacing them about 3/4 inch (2cm) apart.
  8. Bake for 15–18 minutes, flipping each date halfway through, until bacon is golden and crispy.
  9. Remove from oven and let cool for 2–3 minutes.
  10. Garnish with parsley, nuts, or a drizzle of honey or balsamic glaze if desired. Serve warm.

Notes

For extra crispiness, bake on a wire rack or broil for 1–2 minutes at the end (watch closely). Prep ahead and refrigerate until ready to bake. Try flavor add-ins like herbs or nuts for variety. Use thin-cut bacon for best results. If using wooden toothpicks, soak them in water to prevent burning.
