A quick and easy recipe for crispy, juicy smash burgers with a creamy special sauce, perfect for homemade meals and casual gatherings.

  • 1 pound (450g) ground beef (80/20 blend)
  • Salt and pepper, to taste
  • 1 tablespoon vegetable or canola oil
  • 4 burger buns (brioche or potato buns), toasted
  • 4 slices American cheese
  • Special Sauce:
  • ½ cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1 tablespoon sweet pickle relish
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Fresh Toppings:
  • Iceberg lettuce, shredded
  • Tomato slices
  • Thinly sliced red onion
  • Pickles (dill or bread-and-butter)

Instructions

  1. Mix the Special Sauce: In a small bowl, whisk together mayonnaise, ketchup, mustard, sweet pickle relish, garlic powder, onion powder, smoked paprika, salt, and pepper. Cover and refrigerate.
  2. Prepare the Beef: Divide ground beef into 4 equal portions (about 4 ounces each). Roll into loose balls and season lightly with salt and pepper just before cooking.
  3. Heat the Skillet or Griddle: Place cast iron skillet over medium-high heat and add 1 tablespoon oil. Heat until it just starts to smoke (3-5 minutes).
  4. Smash the Patties: Place one beef ball in skillet and press down firmly with spatula to about ¼-inch thickness. Hold for 10 seconds. Repeat for remaining patties, cooking 2 at a time if possible.
  5. Cook the First Side: Cook patties without moving for 2-3 minutes until edges are dark brown and crispy.
  6. Flip and Add Cheese: Flip patties and immediately place a slice of American cheese on each. Cook 1-2 minutes until cheese melts and patties are cooked through but still juicy.
  7. Toast the Buns: While patties cook, slice and lightly butter buns. Toast face down in a separate pan or on griddle for 1-2 minutes until golden and crisp.
  8. Assemble Burgers: Spread special sauce on bottom bun, add lettuce, cheesy patty, tomato slice, onion rings, and pickles. Top with other half of bun.
  9. Serve Immediately: Enjoy hot off the skillet for best crispy crust and melty cheese.

Notes

Ensure pan is very hot before smashing patties to get crispy edges. Avoid pressing patties after flipping to keep them juicy. Let burgers rest for a minute before serving to redistribute juices. Special sauce can be made ahead and stored refrigerated for up to a week. Use gluten-free buns or lettuce wraps for gluten-free option.
