These crispy air fryer sweet potato tots are a quick, easy, and crowd-pleasing Thanksgiving side dish. With a crunchy exterior and soft, flavorful insides, they’re perfect for holiday gatherings or anytime snacking.

  • 2 large sweet potatoes (about 1 lb), peeled and diced
  • 1 large egg, beaten
  • 2/3 cup panko breadcrumbs (regular or gluten-free)
  • 2 tablespoons cornstarch
  • 2 tablespoons all-purpose flour (or almond flour for gluten-free)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Olive oil spray (or avocado oil spray)
  • Optional: chopped fresh herbs (parsley or chives)
  • Optional: 2 tablespoons grated Parmesan cheese
  • Optional: pinch of cayenne pepper

Instructions

  1. Peel and dice sweet potatoes. Place in a saucepan, cover with water, and bring to a boil over medium-high heat. Cook for 12-15 minutes until fork-tender. Drain and let cool for 5 minutes.
  2. Transfer cooled sweet potatoes to a mixing bowl. Mash with a fork or potato masher until smooth but slightly chunky.
  3. Add beaten egg, flour, cornstarch, panko breadcrumbs, salt, black pepper, smoked paprika, and garlic powder. Mix until well combined. If mixture is too sticky, add more breadcrumbs.
  4. Scoop heaping teaspoons of mixture and roll into small cylinders (about 1 inch long). Place shaped tots on a parchment-lined tray. You should get 28-32 tots.
  5. Preheat air fryer to 400°F for 3 minutes.
  6. Lightly spray tots with olive oil or avocado oil spray. Arrange in a single layer in the air fryer basket, leaving space between each tot.
  7. Air fry at 400°F for 10-12 minutes, flipping halfway through, until deep golden and crispy outside and soft inside.
  8. Transfer finished tots to a serving plate, sprinkle with extra salt or fresh herbs if desired, and serve hot.

Notes

Let sweet potatoes cool after boiling to reduce moisture. Chill shaped tots for 10-15 minutes before air frying for best results. Use panko for extra crunch. Don’t overcrowd the air fryer basket. For gluten-free, use almond flour and gluten-free panko. For vegan, substitute egg with flaxseed egg. Tots can be made ahead and refrigerated or frozen before cooking.
