  • 1/2 teaspoon dried thyme (or rosemary)
  • 2 oz goat cheese, crumbled
  • 1 tablespoon fresh parsley or dill, chopped

Instructions

  1. Peel the beets and cut into 1-inch cubes for even roasting. Wear gloves or rub hands with lemon juice to prevent staining.
  2. Place beet cubes in a large mixing bowl. Add olive oil, sea salt, black pepper, garlic powder, and dried thyme. Toss well to coat.
  3. Preheat air fryer to 400°F for 2-3 minutes.
  4. Spread beets in a single layer in the air fryer basket. Avoid crowding; cook in batches if necessary.
  5. Air fry for 15 minutes, shaking the basket or flipping beets halfway through for even browning.
  6. Check doneness by piercing a beet cube with a fork; it should be tender inside and crispy outside. If needed, air fry for 2-3 more minutes.
  7. Transfer roasted beets to a serving bowl. Sprinkle with crumbled goat cheese and chopped parsley or dill.
  8. Serve immediately while hot for best texture. For softer cheese, toss beets with goat cheese while still warm.
