A quick and easy side dish featuring crispy, caramelized carrots glazed with maple syrup and topped with crunchy pecans. Perfect for beginners and ready in under 25 minutes.

  • 1 pound fresh carrots, peeled and cut into sticks or ½-inch thick rounds
  • 2 tablespoons pure maple syrup
  • 1 tablespoon olive oil
  • ⅓ cup chopped pecans (toasted or raw)
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper (optional)
  • ¼ teaspoon ground cinnamon (optional)

Instructions

  1. Peel and cut 1 pound of carrots into sticks or ½-inch thick rounds, keeping sizes uniform for even cooking.
  2. In a medium mixing bowl, combine 2 tablespoons maple syrup, 1 tablespoon olive oil, ½ teaspoon sea salt, ¼ teaspoon black pepper, and ¼ teaspoon ground cinnamon if using. Add carrots and toss until evenly coated.
  3. Preheat the air fryer to 375°F (190°C) for about 3 minutes.
  4. Place the carrots in the air fryer basket in a single layer. Cook for 10 minutes, shaking or tossing halfway through.
  5. After 10 minutes, sprinkle ⅓ cup chopped pecans over the carrots. Continue cooking for another 3-5 minutes until pecans are toasted and carrots are tender with crispy edges.
  6. Remove from the air fryer and transfer to a serving dish. Drizzle any leftover maple syrup mixture over the top for extra shine and sweetness.

Notes

If carrots seem too dry during cooking, add a tiny splash of water before cooking to steam lightly. For softer carrots, add 2-3 minutes to cooking time. Watch pecans carefully during the last minutes to avoid burning. Clean air fryer basket soon after use to prevent sticky syrup buildup. For extra gloss, brush with melted butter after cooking.
