  • 2 medium zucchini (about 12 ounces / 340 grams), washed and cut into fries
  • 1/2 cup (50g) grated Parmesan cheese
  • 1/2 cup (60g) panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried Italian herbs (optional)
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 large egg, beaten
  • Cooking spray or olive oil mist

Instructions

  1. Slice the zucchini into 3-inch long sticks, about 1/2-inch thick (7-8 cm by 1.25 cm).
  2. In a shallow bowl, combine grated Parmesan, panko breadcrumbs, garlic powder, dried Italian herbs, salt, and black pepper. Mix well.
  3. Beat the egg in another bowl until smooth.
  4. Dip each zucchini stick into the beaten egg, letting excess drip off, then roll it in the Parmesan-panko mixture, pressing lightly to adhere. Place coated fries on a plate. Repeat until all zucchini are coated.
  5. Preheat the air fryer to 400°F (200°C) for 3-5 minutes.
  6. Place zucchini fries in a single layer in the air fryer basket. Avoid stacking and lightly spray with cooking spray or olive oil mist.
  7. Air fry at 400°F (200°C) for 8 minutes. At the 4-minute mark, shake the basket or flip fries gently with tongs to ensure even browning.
  8. If fries aren’t crispy enough, cook for an additional 1-2 minutes, watching closely to avoid burning.
  9. Serve immediately, optionally sprinkling more Parmesan and fresh parsley on top.

Notes

Pat zucchini dry before coating to reduce moisture and improve crispiness. Preheat the air fryer for best results. Flip or shake fries halfway through cooking to ensure even browning. For gluten-free, substitute panko with almond flour or gluten-free crumbs. Nutritional yeast can replace Parmesan for a dairy-free option. Leftovers can be reheated in the air fryer at 375°F for 3-4 minutes.
