Ingredients

Scale
  • 10 ounces frozen chopped spinach, thawed and squeezed dry
  • 14 ounces artichoke hearts, drained and chopped
  • 8 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded sharp cheddar cheese, plus extra 1/2 cup for topping
  • 2 cloves garlic, minced
  • Salt to taste
  • Black pepper to taste
  • Red pepper flakes (optional, a pinch)

Instructions

  1. Preheat your oven to 375Β°F (190Β°C).
  2. Thaw frozen spinach completely and squeeze out as much water as possible. Chop drained artichoke hearts into bite-sized pieces.
  3. In a medium bowl, beat 8 ounces softened cream cheese with 1/2 cup sour cream and 1/4 cup mayonnaise until smooth and creamy.
  4. Stir in 1/2 cup grated Parmesan, 1 cup shredded mozzarella, 1/2 cup shredded cheddar, and 2 cloves minced garlic. Season with salt, black pepper, and red pepper flakes if using.
  5. Gently fold in the prepared spinach and artichokes until evenly distributed.
  6. Transfer the dip to an 8×8-inch baking dish and spread evenly. Sprinkle an extra 1/2 cup shredded cheddar cheese on top to create the crispy crust.
  7. Bake for 20-25 minutes until the cheese on top is golden brown and bubbling.
  8. Let the dip cool for about 5 minutes before serving.

Notes

For extra crispy top, broil for 1-2 minutes after baking but watch closely to avoid burning. Use fresh grated cheese for best melt and flavor. Squeeze excess water from spinach and artichokes to avoid watery dip. Can substitute sour cream with Greek yogurt or use dairy-free alternatives for vegan version. Leftovers can be refrigerated up to 3 days or frozen up to 2 months.
