  • 1/2 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • 4 oz cream cheese, cubed, softened
  • 1/2 cup heavy cream or half-and-half
  • Chopped fresh cilantro (for topping)
  • Sliced avocado (for topping)
  • Sliced jalapeños (for topping)
  • Shredded Monterey Jack or cheddar cheese (for topping)
  • Lime wedges (for topping)
  • Crushed tortilla chips (for topping)

Instructions

  1. Dice the onion and garlic. Place chicken breasts (or thighs) at the bottom of your slow cooker.
  2. Pour in the drained beans and corn over the chicken.
  3. Sprinkle cumin, oregano, chili powder, smoked paprika, salt, and pepper evenly over the top. Add green chiles and pour in chicken broth.
  4. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours.
  5. After cooking, use two forks to shred the chicken right in the pot.
  6. Add softened cream cheese and heavy cream. Stir gently until the cream cheese melts and blends into the chili.
  7. Taste and adjust seasoning as needed. If chili is too thick, add a splash of broth.
  8. Ladle chili into bowls and top with cilantro, avocado, shredded cheese, jalapeños, lime wedges, and crushed tortilla chips.
