Creamy Slow Cooker Tuscan Chicken

A rich and comforting slow cooker chicken dish with garlic, sun-dried tomatoes, spinach, and a luscious creamy sauce, perfect for easy weeknight dinners.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680g)
  • 1/3 cup sun-dried tomatoes packed in oil, roughly chopped (50g)
  • 3 cups fresh spinach (90g)
  • 3 garlic cloves, minced
  • 3/4 cup heavy cream (180ml)
  • 1 cup chicken broth (240ml), low sodium preferred
  • 1/2 cup grated Parmesan cheese (50g)
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Rinse and pat dry the chicken breasts. Mince the garlic and roughly chop the sun-dried tomatoes. Rinse the spinach and set aside.
  2. Heat 1 tablespoon olive oil in a skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant but not browned. Toss in the chopped sun-dried tomatoes and cook for another 2 minutes.
  3. Place the chicken breasts at the bottom of the slow cooker. Pour in the chicken broth and sprinkle the Italian seasoning, salt, and pepper over the chicken.
  4. Spoon the garlic and sun-dried tomato mixture evenly over the chicken breasts.
  5. Cover and cook on low for 3.5 to 4 hours until the chicken is tender and reaches an internal temperature of 165°F (74°C). Avoid opening the lid frequently.
  6. Add the fresh spinach and heavy cream to the slow cooker. Stir gently to combine and cook uncovered for another 10-15 minutes until the spinach wilts and the sauce thickens slightly.
  7. Stir in the grated Parmesan cheese until melted and fully incorporated. Taste and adjust salt and pepper if needed.
  8. Serve warm over pasta, rice, or mashed potatoes.

Notes

If the sauce is too thin, mix 1 teaspoon cornstarch with 2 teaspoons cold water and stir into the sauce. Cook on high for 10 more minutes until thickened. For juicier chicken, sear chicken breasts before slow cooking. Add cream and spinach at the end to prevent curdling. Avoid opening the slow cooker lid frequently during cooking.
