Creamy Peppermint Bark with Dark Chocolate

A creamy, smooth peppermint bark layered with rich dark chocolate and sweet white chocolate, perfect for holiday treats and gifting.

  • 8 oz (225 g) dark chocolate (70% cacao or higher)
  • 10 oz (280 g) white chocolate chips or chopped white chocolate
  • 1/4 cup (60 ml) heavy cream
  • 1 tsp peppermint extract
  • 1/2 cup crushed candy canes or peppermint candy
  • 1 tbsp (14 g) unsalted butter (optional)
  • Pinch of sea salt

Instructions

  1. Line an 8×8 inch (20×20 cm) baking pan with parchment paper, leaving some overhang for easy removal.
  2. Chop dark chocolate finely. Melt in microwave-safe bowl in 30-second increments, stirring between each, until smooth (about 2-3 minutes total) or use a double boiler.
  3. Stir in unsalted butter and a pinch of sea salt. Pour dark chocolate into prepared pan and spread evenly. Chill in fridge for 15-20 minutes until firm but not fully set.
  4. Place candy canes in a sealed plastic bag and crush into small pieces using a rolling pin or meat mallet.
  5. In a clean microwave-safe bowl, combine white chocolate and heavy cream. Heat in 20-second bursts, stirring well after each, until fully melted and creamy (about 1-2 minutes). Stir in peppermint extract.
  6. Pour white chocolate mixture over chilled dark chocolate layer and spread evenly. Immediately sprinkle crushed candy canes on top, pressing lightly to help them stick.
  7. Refrigerate for at least 1 hour or until bark is completely firm.
  8. Lift bark out using parchment paper edges and break or cut into irregular pieces. Store in an airtight container in the fridge.

Notes

If white chocolate seizes or becomes grainy, add a splash more cream and stir vigorously to smooth it out. Chill between layers to keep them distinct. Melt chocolate gently to avoid overheating and seizing. Press crushed candy canes lightly to maintain crunch without embedding too deep.
