  • 4 boneless skinless chicken breasts (about 1.5 lbs), pounded to even thickness
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup all-purpose flour (or gluten-free flour)
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • 1 cup low-sodium chicken broth
  • 3/4 cup heavy cream
  • 1/2 cup freshly grated parmesan cheese
  • 1/2 cup sun-dried tomatoes (packed in oil), drained and sliced
  • 1 teaspoon Italian seasoning (or mix of dried oregano, basil, and thyme)
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh basil leaves, for garnish
  • Lemon zest, optional, for garnish

Instructions

  1. Place chicken breasts between two sheets of parchment paper and gently pound to about 1/2 inch thick. Season both sides with salt and pepper. Dredge each piece lightly in flour, shaking off excess.
  2. Heat olive oil and butter in a large skillet over medium-high heat until butter sizzles. Add chicken and cook for 3–4 minutes per side, until golden brown and cooked through (internal temp should be 165Β°F). Remove chicken to a plate.
  3. In the same pan, add minced garlic and sliced sun-dried tomatoes. SautΓ© for 1–2 minutes until fragrant.
  4. Pour in chicken broth, scraping up any browned bits from the pan. Reduce heat to medium-low.
  5. Stir in heavy cream, parmesan, Italian seasoning, and red pepper flakes. Simmer gently for 6–8 minutes, stirring often, until sauce thickens and tomatoes are tender.
  6. Add chicken (and any juices on the plate) back to the pan. Spoon sauce over chicken, simmer 5 minutes more until heated through.
  7. Sprinkle with fresh basil and lemon zest (if using). Serve hot, spooning extra sauce over the top.

Notes

For gluten-free, use GF flour or cornstarch for dredging. Chicken thighs can be substituted for breasts. For dairy-free, use coconut cream and nutritional yeast. Sauce thickness can be adjusted by simmering longer or adding more broth. Leftovers keep well and flavors deepen overnight.
