  • 2 tablespoons all-purpose flour
  • 2 cups seafood stock

Instructions

  1. Prepare the lobster: If using whole lobsters, cook them in boiling water until shells turn bright red (about 8-10 minutes). Remove the meat and set aside. Reserve the shells for the stock.
  2. Sauté the aromatics: In a large stockpot over medium heat, melt the butter. Add the diced onion, carrots, and celery. Cook until softened, about 5 minutes. Stir in the minced garlic and cook for an additional minute.
  3. Add tomato paste: Stir in the tomato paste and cook for 2-3 minutes until it deepens in color, enhancing its flavor.
  4. Create the roux: Sprinkle the flour over the vegetables and stir well. Cook for 1-2 minutes to eliminate the raw flour taste.
  5. Deglaze with wine: Pour in the white wine, scraping the bottom of the pot to release any flavorful bits. Let it simmer for 2-3 minutes until slightly reduced.
  6. Add stock: Gradually pour in the seafood stock while stirring to prevent lumps. Bring to a simmer and let it cook for 15 minutes to blend the flavors.
  7. Blend the soup: Remove the pot from heat and carefully transfer the mixture to a blender. Blend until smooth, or use an immersion blender directly in the pot.
  8. Add cream and season: Return the soup to the pot and stir in the heavy cream. Add paprika, salt, and pepper to taste. Let it simmer on low heat for another 5-10 minutes.
  9. Add the lobster meat: Chop the lobster meat into bite-sized pieces and stir it into the soup. Heat through for 2-3 minutes, being careful not to overcook.
  10. Serve and garnish: Ladle the bisque into bowls and garnish with freshly chopped parsley. Serve immediately.
