A magical dessert with a silky custard filling and golden crust, infused with bright lemon flavor. Perfect for any occasion.

Ingredients

Scale
  • 4 large eggs
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 cups whole milk
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your pie dish lightly with butter or cooking spray.
  2. In a large mixing bowl, whisk together the eggs and sugar until smooth and pale.
  3. Add the melted butter, lemon juice, lemon zest, and vanilla extract to the egg mixture. Stir until well combined.
  4. In a separate bowl, sift together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, whisking continuously to avoid lumps.
  6. Slowly pour in the milk while stirring. The batter will be thin—don’t worry, this is normal!
  7. Pour the batter into the prepared pie dish, making sure it’s evenly distributed.
  8. Bake for 40-45 minutes, or until the top is golden and set. The middle should jiggle slightly when shaken.
  9. Allow the pie to cool completely before slicing. This helps the layers set properly.
  10. Serve chilled or at room temperature, garnished with a sprinkle of powdered sugar or a dollop of whipped cream.

Notes

Use fresh lemons for the best flavor. Ensure ingredients are at room temperature for smoother blending. Cool the pie completely before slicing to allow the layers to set properly.
