A creamy lemon cobbler with a tangy filling and a golden, flaky crust that’s perfect for any occasion.

Ingredients

  • Fresh lemons (zest and juice)
  • Granulated sugar
  • Unsalted butter, softened
  • All-purpose flour
  • Baking powder
  • Milk (whole milk or almond milk for dairy-free)
  • Heavy cream
  • Vanilla extract
  • Salt

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Prepare the lemon filling: In a medium bowl, combine sugar, lemon zest, and lemon juice. Stir in heavy cream and vanilla extract until smooth. Set aside.
  3. Make the cobbler batter: In another bowl, whisk together flour, baking powder, sugar, and salt. Gradually add milk and melted butter, stirring until the batter is smooth.
  4. Assemble the cobbler: Pour the lemon filling into the greased baking dish, spreading it evenly. Pour the cobbler batter on top, covering the filling as much as possible.
  5. Bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the crust comes out clean.
  6. Cool slightly for about 10 minutes before serving.

Notes

[‘Use fresh lemons for the best flavor.’, ‘Let the cobbler cool slightly before serving to allow the filling to set.’, ‘If the crust browns too quickly, cover it loosely with foil during the last 10 minutes of baking.’]
