  • 1 lb Italian sausage (mild or spicy, crumbled and browned)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 16 oz gnocchi (store-bought or homemade)
  • 2 cups fresh baby spinach
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 tbsp butter (optional)

Instructions

  1. Heat a large soup pot over medium heat. Add the Italian sausage and cook until browned, breaking it up into crumbles as it cooks, about 5-7 minutes. Drain excess grease if necessary.
  2. Add the diced onion and minced garlic to the pot. SautΓ© until the onion is translucent and the garlic is fragrant, about 3-4 minutes.
  3. Pour in the chicken broth and bring it to a simmer. Scrape the bottom of the pot to release any browned bits.
  4. Lower the heat and stir in the heavy cream. Let the mixture simmer gently for 5 minutes.
  5. Add the gnocchi to the pot. Cook as per the package instructions (usually around 3-4 minutes), or until the gnocchi floats to the surface.
  6. Toss in the fresh spinach and stir until wilted, about 1-2 minutes.
  7. Season the soup with salt and pepper to taste. If desired, stir in a pat of butter for extra richness.
  8. Serve hot, topped with grated Parmesan cheese.
