Instructions

  1. Prepare the crust: In a medium bowl, combine chocolate cookie crumbs with melted unsalted butter. Stir until crumbs are evenly coated and resemble wet sand. Press mixture firmly and evenly into the bottom and up the sides of a 9-inch pie dish. Smooth out and chill in the fridge for at least 15 minutes.
  2. Make the filling base: Beat softened cream cheese with powdered sugar until smooth and creamy, about 2-3 minutes. Scrape down sides to remove lumps.
  3. Whip the cream: In a separate bowl, whip chilled heavy cream with an electric mixer until soft peaks form, about 3-4 minutes.
  4. Combine mint flavor and coloring: Stir mint extract into the cream cheese mixture. Add green food coloring if desired and mix gently until color is even.
  5. Fold whipped cream into cream cheese mixture in three additions using a spatula with gentle folding motions to keep it airy and light.
  6. Prepare the minty chocolate swirls: Melt semi-sweet chocolate in 20-second bursts in a microwave-safe bowl, stirring between bursts. Mix in finely chopped fresh mint leaves.
  7. Assemble the pie: Pour half of the creamy filling into the chilled crust. Drizzle half of the melted mint chocolate over the filling in thin ribbons. Use a toothpick or skewer to swirl the chocolate gently through the filling to create a marbled effect. Repeat with remaining filling and chocolate, swirling again.
