  • 1 pound store-bought potato gnocchi (fresh or frozen)
  • 2 cups cooked chicken, shredded or diced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Cook the gnocchi according to the package instructions (usually 2-3 minutes) until they float to the top. Drain and set aside.
  2. In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Stir in the heavy cream and chicken broth, whisking until smooth.
  3. Slowly whisk in the Parmesan cheese until melted and fully incorporated. Season with salt and pepper to taste. Let the sauce simmer for 3-4 minutes, stirring occasionally.
  4. Add the cooked gnocchi and shredded chicken to the skillet. Stir gently to coat everything evenly in the sauce.
  5. Pour the mixture into a greased 9×13-inch baking dish, spreading it out evenly.
  6. Sprinkle the shredded mozzarella cheese over the top.
  7. Preheat your oven to 375°F (190°C). Bake uncovered for 20-25 minutes, or until the cheese is bubbly and golden brown.
  8. Remove from the oven and let cool for 5 minutes. Garnish with freshly chopped parsley and serve warm.
