Instructions

  1. Prep the Ingredients (10 minutes): Slice the beef into thin strips about 1/4-inch thick. Chop the onion finely, mince the garlic, and slice the mushrooms.
  2. Cook the Egg Noodles (8-10 minutes): Bring a large pot of salted water to a boil. Add the egg noodles and cook until al dente, about 8 minutes. Drain and toss with a little butter or oil to prevent sticking.
  3. Brown the Beef (5-7 minutes): Heat 1 tablespoon of butter in a large skillet over medium-high heat. Add beef strips in a single layer without crowding and sear until browned on both sides but not fully cooked, about 2-3 minutes per side. Remove beef and set aside.
  4. Sauté the Vegetables (5 minutes): In the same skillet, add remaining 2 tablespoons butter. Cook onions until translucent, about 3 minutes. Add garlic and mushrooms, cooking until mushrooms release moisture and start to brown, about 4 minutes.
  5. Make the Sauce (8 minutes): Sprinkle flour over vegetables and stir to coat, cooking 1-2 minutes. Slowly whisk in beef broth, bring to a gentle simmer, and cook until sauce thickens, about 5 minutes.
  6. Finish the Stroganoff (5 minutes): Lower heat to medium-low. Stir in sour cream, Dijon mustard, and Worcestershire sauce. Return beef to pan and heat through gently without boiling. Season with salt and pepper.
  7. Combine and Serve: Add cooked egg noodles to the skillet or serve stroganoff over noodles. Garnish with fresh parsley if desired. Serve immediately.

Do not overcrowd the pan when browning beef to ensure proper searing. Use room temperature sour cream to prevent curdling and add it off heat or on low heat. If sauce is too thick, add a splash of beef broth or water to loosen. For gluten-free version, substitute flour and noodles accordingly.
