Cozy Tuscan White Bean Soup Recipe Perfect for Fall

A creamy and comforting Tuscan white bean soup packed with garlic, rosemary, and cannellini beans, perfect for chilly autumn evenings.

  • 2 tablespoons olive oil
  • 1 yellow onion, diced
  • 3 garlic cloves, minced
  • 2 carrots, sliced thinly
  • 2 celery stalks, chopped
  • 2 cans cannellini beans, drained and rinsed
  • 4 cups vegetable broth, low-sodium preferred
  • 1 sprig fresh rosemary (or 1 teaspoon dried rosemary)
  • 1 bay leaf
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1 tablespoon freshly squeezed lemon juice
  • Salt and pepper to taste
  • Freshly grated Parmesan cheese for garnish (optional)
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat the olive oil in a large soup pot over medium heat. Add the diced onion, minced garlic, carrots, and celery. Sauté for 5-7 minutes until the vegetables soften and the onion turns translucent.
  2. Add the cannellini beans, vegetable broth, rosemary, bay leaf, and crushed red pepper flakes (if using). Stir well to combine.
  3. Bring the soup to a gentle boil, then reduce the heat to low and let it simmer for 20-25 minutes. Stir occasionally, and skim off any foam that may form.
  4. Remove the rosemary sprig and bay leaf from the pot. For a creamier texture, use an immersion blender to partially puree the soup. Leave some beans and veggies intact for texture.
  5. Stir in the lemon juice, then season with salt and pepper to taste. Let the soup simmer for another 5 minutes.
  6. Ladle the soup into bowls, and garnish with freshly chopped parsley and grated Parmesan cheese (if desired).
