  • 23 pounds beef chuck roast, trimmed of excess fat and cut into chunks
  • 4 cups beef broth, preferably low-sodium
  • 12 ounces egg noodles, uncooked
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 large carrots, sliced thinly (optional)
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons cornstarch mixed with 2 tablespoons water (optional for thickening)

Instructions

  1. Season the beef chunks generously with salt and pepper. Heat a large skillet over medium-high heat and sear the beef on all sides until browned.
  2. Transfer the beef to your slow cooker. Add the diced onion, minced garlic, sliced carrots, bay leaves, and thyme.
  3. Pour the beef broth over the ingredients, ensuring the beef is mostly submerged. Cover and cook on low for 8 hours or high for 4-5 hours.
  4. Once the beef is tender and easily shredded, remove the bay leaves and shred the beef using two forks directly in the slow cooker.
  5. Turn the slow cooker to high. Add the uncooked egg noodles, stirring gently to combine. Let cook for an additional 20-30 minutes, or until the noodles are tender.
  6. If you want a thicker broth, mix the cornstarch and water in a small bowl to make a slurry, then stir it into the slow cooker during the last 10 minutes.
  7. Taste and adjust seasoning with additional salt and pepper, if needed. Serve warm and enjoy!
