  • 1 tablespoon olive oil
  • 1 medium onion, diced

  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 4 cups chicken or turkey broth
  • 1 cup heavy cream
  • 3 tablespoons all-purpose flour
  • 2 teaspoons fresh thyme leaves
  • 1 bay leaf
  • Salt and black pepper, to taste
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon dried thyme
  • 1/2 cup whole milk
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Dice the onion, carrots, and celery. Mince the garlic and shred the roast turkey.
  2. Heat olive oil in a large Dutch oven over medium heat. Add the onion, carrots, celery, and garlic. Cook until softened and fragrant, about 5 minutes.
  3. Sprinkle the flour over the vegetables and stir well. Cook for 2 minutes to eliminate the raw flour taste.
  4. Slowly pour in the chicken or turkey broth, stirring constantly to avoid lumps. Add the thyme, bay leaf, and a pinch of salt and pepper.
  5. Bring to a boil, then reduce to a gentle simmer. Cook for 20 minutes, allowing the flavors to meld.
  6. In a mixing bowl, whisk together the flour, baking powder, salt, parsley, and thyme. Add the melted butter and milk, stirring until a thick dough forms.
  7. Stir the shredded turkey into the simmering stew. Taste and adjust seasoning as needed.
  8. Using a spoon, drop small mounds of dough onto the surface of the stew. Cover the pot and cook for 15 minutes. Avoid lifting the lid during this time—the steam is what helps the dumplings cook.
  9. Gently stir the heavy cream into the stew, being careful not to break the dumplings. Cook for another 5 minutes over low heat.
  10. Ladle the stew and dumplings into bowls. Garnish with a sprinkle of fresh parsley and serve immediately.
