  • 1 cup (240 ml) canned pumpkin puree (not pumpkin pie filling)
  • 1 cup (200 g) packed light brown sugar
  • 1/2 cup (115 g) unsalted butter, softened
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 2 cups (250 g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • Optional: 1/2 cup (75 g) chopped walnuts or pecans
  • Optional: 1/2 cup (90 g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, cream together the softened butter and brown sugar until light and fluffy, about 2 to 3 minutes using an electric mixer on medium speed.
  3. Beat in the pumpkin puree, then the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger.
  5. Gradually add the dry ingredients to the wet pumpkin mixture, mixing on low speed until fully incorporated. Fold in nuts or chocolate chips if using.
  6. Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheets about 2 inches apart.
  7. Bake for 12–14 minutes, or until edges are set but centers still look slightly soft.
  8. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Do not overmix the dough once dry ingredients are added to keep cookies soft and chewy. Use room temperature ingredients for best texture. If dough is too sticky, chill for 15 minutes before scooping. Rotate baking sheets halfway through baking for even browning. Store cookies in an airtight container with a slice of bread to maintain softness.
