  • 1 large orange, sliced thinly
  • 23 cinnamon sticks
  • 68 whole cloves
  • 2 star anise (optional)
  • 23 tablespoons honey or maple syrup (maple syrup for vegan option)
  • 1-inch piece fresh ginger, sliced thin
  • 1/2 cup (120 ml / 4 fl oz) water
  • Optional: splash of brandy or orange liqueur

Instructions

  1. Slice the orange into thin rounds and peel the ginger into thin slices. Gather cinnamon sticks, cloves, and star anise into a small spice sachet or cheesecloth for easy removal.
  2. Pour the bottle of red wine and 1/2 cup water into a saucepan over low heat to help spices infuse gently without boiling.
  3. Add the cinnamon sticks, cloves, star anise, sliced ginger, and orange rounds. Stir in 2 tablespoons of honey or maple syrup. Mix gently.
  4. Simmer the mixture on low heat for 15 minutes, keeping temperature around 170Β°F (75Β°C) without boiling to meld flavors.
  5. Taste and adjust sweetness or spices if desired. Remove spice sachet or fish out whole spices and orange slices. Serve warm.

Do not boil the wine to preserve alcohol and flavor. Use a kitchen thermometer to keep temperature around 170Β°F (75Β°C). Prepare ahead and store in fridge up to 3 days; reheat gently without boiling. For non-alcoholic version, substitute wine with grape or cranberry juice and add apple cider vinegar.
