Cozy Lentil Stew Bowl with Mashed Potatoes

A hearty and comforting dish combining creamy mashed potatoes with a flavorful lentil stew, perfect for cozy nights or family dinners.

  • 1 cup dry lentils (any variety, rinsed and drained)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, chopped
  • 1 cup diced tomatoes (canned or fresh)
  • 4 cups vegetable broth
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • 1 tbsp olive oil
  • 2 lbs potatoes (Yukon Gold or Russet)
  • 1/2 cup milk (use dairy-free milk if preferred)
  • 3 tbsp unsalted butter, softened
  • Salt and pepper to taste

Instructions

  1. Peel and dice the potatoes into even chunks. Place them in a medium pot and cover with water. Add a pinch of salt and bring to a boil. Cook for 15-20 minutes, or until fork-tender.
  2. Drain the potatoes and return them to the pot. Add milk, butter, and a pinch of salt and pepper. Mash until smooth and creamy. Taste and adjust seasoning as needed. Cover and set aside.
  3. Heat olive oil in a large pot over medium heat. Add the diced onion, garlic, carrots, and celery. SautΓ© for 5-7 minutes until softened and fragrant.
  4. Stir in smoked paprika and thyme, letting the spices toast for about 30 seconds. Add the rinsed lentils and diced tomatoes, stirring to combine.
  5. Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and let simmer for 25-30 minutes, stirring occasionally. The lentils should be tender but not mushy.
  6. Taste the stew and adjust seasoning with salt and pepper if needed. If the stew is too thick, add a splash of broth or water to reach your desired consistency.
  7. To serve, spoon a generous portion of mashed potatoes into a bowl and ladle the lentil stew over the top. Garnish with fresh parsley or a drizzle of olive oil, if desired.
